The grapes: 95% Nebbiolo Chiavennasca – 5% other indigenous vinesas Rossola, Pignola and Brugnola.
The vineyards: terraced vineyards of the sub-areas of Sassella (Communes of Castione Andevenno and Sondrio) and Vagella (town of Teglio) of Valtellina Superiore area.
Area under vines: 1 hectare; all the vineyards are located on the Rhetical side terraced at altitudes between 400 and 600 metres a.l.s..
Type of cultivation: guyot classic with a single chapter to frutto.
Yield per hectare: 55 quintals.
Vinification: the bunches of Sassella were collected in mid October, squeezed, transferred and fermented in stainless steel with stayed on the skins for 10 days; the grapes from the Vagella have been harvested some days before and subject to partial drying for 30 days.
Maturation: the aging of the two wines, united, took place in oak casks of average capacity for 15 months, following further aging of 9 months in stainless steel and of 8 months in bottle.
Alcohol: 13,5% Vol.
FOOD MATCHING: roasted red meat, lamb, kid, game, hard cheese. As all the Valtellina Superiore is very good friend of typical dishes which salmì.
