Exclusively produced with Nebbiolo grapes, called Chiavennasca locally, and a minimum percentage (5)? of grapes coming from other indigenous vines.
The grapes are harvested well ripe at the end of October and after a selection carefully are vinified traditionally "in red" with 10 days of maceration of skins in the must. The fermentation takes place at 28-30â°c.
The wine rests in steel until December then ages for 12 months in oak barrels of medium size. The aging in glass shall complete the development before the marketing.
a ruby red colour with garnet reflections, has perfume ethereal, taste dry, harmonious, velvety and tannic.
FOOD MATCHING:prefers accompaniment to dishes from our typical cousin as pizzoccheri, sciatt, chiscioi.
