Production area: Valgella, San Gervasio vineyard. The vineyard is situated at 650 m. a.s.l. in the east part of the municipality of Teglio, south exposure.
Harvest: 35 hl/ha. The grapes, selected in the vineyard, are picked in first week of October. They are left in plastic boxes and arranged in an airy room (called “fruttaio”) until the first half of December.
Wine making: Alcoholic fermentation in stainless steel tanks for twenty days with maceration of ten days. Malolactic fermentation in barriques, aging for twelve months in barriques.
Alcoholic content: 15,00% vol.
Total acidity: 5,50 g/l
Serving Temperature: 18° C.
FOOD MATCHING: companion of meditation, it combines perfectly to ripened cheeses (Bitto 4-5 years).
