The vineyards used to make Olé! lie above Sondrio in the zone of Valtellina Superiore d.o.c.g.. They are historic vines planted on terraced land facing south and at heights varying between 400 and 450 metres above sea level.
The vines stand on 30% to 70% slopes and are planted in rows pointing uphill.
The terrain is what remains of a moraine, with the soil prevalently sandy and with acidic reaction.
The yields total 6000 kg per hectare (a little more than 40 hectolitres of wine per hectare).
The grape harvest, which is done manually, generally takes place between 10th and 30th of October, in small 8 kg crates.
The winemaking process includes the grape being removed from the stalks and crushed gently, with the bunches arriving at the cellar undamaged; fermentation takes place in steel vats with maceration of 14 days. Ageing is effected for 8 months in stainless steel barrels, then in the bottle for a further 3 months prior to going on sale.
