Grapes: 100% nebbiolo – Chiavennasca.

The vineyard: the grapes are cultivated in vineyards in some of the best crus in the Inferno subzone – Carlo Negri, Sopragironi, Sottogironi located in the Municipality of Poggiridenti – trained in the arched variant of the Guyot system (3500 vines/hectare) on terraces exposed to the south/east with loose sandy soils, at an altitude of 400-450 metres, with an output of 5,000 litres of wine per hectare.

The wine: Inferno 2011 has a purple colour; a well pronounced and composite aroma with dominant notes of bitter spices (cloves, cinnamon), and dried flowers (rose and violet); a smooth round flavour with great personality. This is a wine which will unquestionably improve with time to become harmonious and elegant. Analytical data: alcohol 13.80%; total acidity 4.96g/l; pH 3.65; sugars 2.3 g/l; extract 29.00 g/l. Ideal conservation: 6/10 years in bottles on their sides in a cool dark environment. Food pairings: roast red meats, lamb, kid, game and mature cheeses. Serving temperature: 18°C.

Vinification and ageing:   the bunches, harvested by hand at the end of October, were vinified on the skins in special temperature-controlled containers and maceration lasted 8 days.

After a period in steel, the wine was transferred into French oak barrels for 24 months.
