The Söl, which takes its name from an area of the Valgella located between the districts called Vedescia (west), Pila Caselli (south), Castelvetro (north) and Bellandina (east).
The soils are franc-sandy moraine acidic. There is a wide variety of rocks and minerals including gneiss, mica schist, phyllite, granite, quartz diorite that give to this Valtellina wine his particular aromatic content.
The winemaking has a stemming and gentle pressing of freshly picked grapes; fermentation and maceration on the skins has no fixed duration but, as usual, is done without changing the natural balance of each vintage waiting patiently for the full swing of the sugar into alcohol.
The Sol is aged on the lees in oak barrels for one year. With the first warm days of June begins spontaneous malolactic fermentation which ends with the lowering of the night temperatures typical of September.
Following 6 months in steel and 6 months in the bottle.
