The grapes: 100% Nebbiolo - Chiavennasca. The vineyard: Vines in some of the best crus in the Inferno subzones – Calvario, Sopragironi, Sottogironi and Cà Rossa – provide the grapes cultivated using the arched variant of the Guyot system (3500 vines/hectare), grown on terraces exposed to the south with loose sandy soils, at an altitude of 400-450 metres, with a yield of 7 tonnes per hectare.
Vinification and aging: the bunches, harvested by hand from 10 to 20 October, were vinified on the skins in special temperature-controlled containers; maceration lasted 5 days.
After a period in steel containers, part of the wine was transferred into small 2nd passage French oak barrels for 16 months and another part left to age in 30 to 50 hl French oak barrels for 20 months.
The wine:
Inferno Mazèr has a deep garnet colour;
the perfume is well pronounced and composite with dominant notes of bitter spices (cloves, cinnamon), dried flowers (rose and violet) and plum jam;
the flavour is dry, savoury and austere, harmonious with an elegant bitterish base of toasted hazelnut.
It is a long-lived, firm, vigorous and well-structured wine. Analytical data: alcohol 13.88 %; total acidity 5.12 g/l; pH 3.76; sugars 2.10 g/l; extract 28.30 g/l.
Optimum conservation: 5/7 years in bottles on their sides in a cool dark environment.
Serve with: roast red meats, lamb, kid, game and mature cheeses.
