Grapes: Nebbiolo
Soil: sandy clay, little humus and very permeable.These favorable factors give to the wine particular perfumes and capability to conservation.
Winemaking: The grapes are dried in special boxes for 60-70 days. Maceration on the skins for 15-17 days in stainless steel vats of 130 hl with plunging breakers.
Aging: 12 months in new oak barrels, 12 months in steel barrels.
Characteristics:
Deep ruby color;
aromatic flavours from raspberry to violet and from ripe plum to tobacco and chocolate;
for our palate this wine is a complex wine: it is very concentrated, with strong character but delicate at the same time; the acidity is very good balanced and its tannins are mature, pleasant with interesting notes of wood; the wine has great persistence.
Serving suggestions: Red meat with strong flavors, grilled meats, game.
Additional Notes:
For the production of this wine , it is used a rigorous selection of grapes (in the same way for the Sforzato production). Grapes are perfectly ripened on the steep slopes of the former convent La Gatta.
Unlike traditional Sforzato San Domenico, The Monastero is aged for 12-15 months in small new oak barrels prized in the ancient vaulted cellars of the estate La Gatta. Thanks to its great concentration and structure, the wine is able to absorb the aromas of wood maintaining its character and its peculiarities.
