The vineyard from which Sforzato derives is a parcel of land of approximately 7,500 m2 lying in Chioso in the district of Tresivio at a height of 600 metres above sea level.
The vines are planted in rows pointing uphill and are divided into a part that is historic vineyard and a part we planted ourselves in 2005.
They stand on a single broad terrace with a gentle, regular south-facing slope. The soil is largely sandy with acidic reaction and morainal in origin.
Since the first year of planting, we have cultivated this plot of land in a natural manner. Grass is allowed to grow spontaneously and is cut with regular scything.
In autumn, this plot enjoys a particularly cool microclimate, enabling us to pick the grapes for drying that are very ripe but still firm towards the end of October. This gives the Sforzato a great equilibrium and pleasing freshness and fragrance.
The soil is morainal, prevalently sandy and acidic.
The grape harvest, which is done manually, took place on 16th October in 2012, using small 3.5 kg crates.
The winemaking process includes the grape being completely removed from the stalks and crushed very gently; fermentation takes place in steel with a maceration of 10 days. Ageing takes place for 12 months in 225 litre French oak barrels for a first, second and third phase, then in the bottle for a further 12 months prior to going on sale.
