The grapes: 95% chiavvennasca (Valtellina nebbiolo), 5% prugnola (fortana) and rossola.
The vineyard: vines have an exposure to South and are located in the Sub area called Grumello at an altitude varying between 350 and 500 meters. The screws are kept in Guyot system and they are amended on the bow side on sandy soils.
The yield of grapes per hectare is: 60 quintals (the limit of the specification is 100 quintals), equivalent to just 42 hectoliters of wine.
The vinification: the ripe grapes are harvested from mid October to early November and vinified by traditionally "red" method, with 10 days of maceration on the skins in the must, the fermentation occurs at 28-30 ° C.
The maturation: the new wine remains in stainless until March, then stop for 15 months in oak casks of Slavonia. Then aging occurs in the bottles for at least 6 months.
Wine characteristics:
garnet colour trend with vivid red brick;
fine fragrance and ethereal, of fragrant violet, spices, with flavours of strawberry and almond blossoms;
taste dry, warm and harmonious, with elegant and pleasant bitter almond and resin long persistent.
Optimum conservation: 5-6 years in bottle horizontally in a cool and dark.
Serving temperature: 20 ° C.
FOOD MATCTHES: noble poultry, game, grilled meats, aged cheeses.
