The wine is named after the 13th Century “Castel Grumello”, an ancient castle overlooks the valley from its position between Sondrio and Montagna. This wine is characterized by its light and fragrant perfume, with a slight violet and strawberry bouquet while its colour is a brilliant red. Which, through ageing, tones down to garnet. It is a full-bodied wine to be laid down in bottles in a fresh dry cellar.
Grape variety: Nebbiolo (Chiavennasca) 100%
Vinification: with soft pressing of the grapes and subsequent fermentation with maceration on the skins for about 10-12 days.
Ageing: 3-4 years in oak barrels and then aged in the bottle for about 6 months.
Alcohol content: minimum 12,5% vol.
Serving temperature: 18°-20° C.
FOOD MATCHING: It is excellent with all type of red meats, game, mature hard cheese and particularly with “polenta taragna” (a sort of buckwhead-meal porridge).
