White wine grapes are found only rarely in Valtellina. The white wine called “Contea” is made from red grapes with a small proportion of white wine added.
“Contea” is a white wine or pale rosé made from red wine grapes. The must is separated as quickly as possible from the skins after light pressing, so the resulting wine has just a little or no colour. Champagne is also made principally from red wine grapes (Pinot Noir). Only Blanc de Blancs is made exclusively from Chardonnay grapes.
