The grapes: 80% chiavvennasca (nebbiolo), 20% prugnola, rossola and pignola.
The vineyard: the grapes come from parcels situated in various zones of Valtellina and are trained by the archetto variation of the Guyot system on shallow, loose soil of sand and silt. The altitude varies from 350 to 500 metres, with a density of 3000 vines per hectare.
The vinification: the ripe grapes, picked between the middle of October and early November, are traditionally vinified by the red wine method with 8 days maceration of the skins in the must; the fermentation takes place with automatic must distributors.
The maturation: the new wine stays in steel tanks for 3 months, and is then transferred to wooden casks for 5 months.
The wine: ruby colour, clean, vinous bouquet, with a fine fragrance of small fruits of the forest, sweet spices and delicate notes of dried roses and violets. Dry, fruity and pleasantly tannic flavour, with an elegant aftertaste of liquorice.
Optimum keeping: 2 years in bottles stored horizontally in cool, dark conditions.
Serving temperature: 20° C.
FOOD MATCHES: first courses, mixed boiled meats (bolliti misti) and white meats.
